Lemon Lavender Shortbread Cookies
Ingredients: – 14 Tbsp butter softened – 1 egg yolk – 2 Tbsp lemon juice – 1 Tbsp lemon zest – 1 1/2 cups plus 2 Tbsp all purpose flour – 1/2 cup arrowroot powder or cornstarch – 1/4 cup dried lavender flowers – pinch salt
Cream the butter & sugar before adding the egg yolk, lemon juice & lemon zest. Combine.
Add the flour, arrowroot, dried lavender, and salt. Stir until dough forms.
Form into a log and wrap in parchment. At this point refrigerate for about 30 minutes, or until firm.
When ready to bake, preheat oven to 300℉. Slice the log into 1/4" rounds. Place on parchment lined baking sheet.
Bake for 25-30 minutes.
Let cool on the baking sheet for a few minutes before enjoying.
